Oil stone sharpeners, also known as Arkansas stones, are a traditional sharpening tool for knives and other blades. Always use an oilstone on a stable surface for safety. Wet a clean kitchen towel or rag on your worktable and place the oilstone on top of it to keep it from slipping during the sharpening process.
Oilstones have two or three different sides that vary in coarseness. Always start with the coarsest side and move to the smoother surfaces as you sharpen. Add one or two teaspoons of mineral oil to the stone. If the stone dries out while you are using it, add more oil.
Hold the blade at a 22° angle with the base on the stone and move it in one fluid motion, running the blade along the stone while applying gentle pressure with your other hand. Repeat this process between 10-30 times per side. Some knives, such as Japanese kitchen knives, use a different angle, so it is best to check that first.
